Equipment
- 1 Air Fryer
- 1 Mixing bowls
- 1 Whisk
- 1 Cookie Scoop
- 1 Parchment Paper
Ingredients
- 2/3 cup Almond Flour
- 1/4 cup Perfect Keto Salted Caramel Protein Powder
- 1/4 cup Coconut Flour
- 1/4 cup Greek Yogurt or Cottage Cheese Use full-fat, blend cottage cheese until smooth
- 2 tbsp Erythritol Use your preferred keto-friendly sweetener
- 1/2 tsp Baking Powder
- 1/8 tsp Salt
- 1/2 tsp Vanilla Extract
- 1 Large Egg Beat one egg and use half
- 2 tbsp Unsweetened Almond Milk Add more if needed for consistency
- 1/4 tsp Ground Cinnamon Optional
- 2 tbsp Powdered Erythritol Optional for coating
Instructions
- Preheat Air Fryer: Preheat your air fryer to 350°F (175°C) for about 5 minutes.
- Mix Dry Ingredients: In a large mixing bowl, whisk together almond flour, Perfect Keto Salty Caramel Protein Powder, erythritol, baking powder, salt, and ground cinnamon (if using).
- Mix Wet Ingredients: In another bowl, combine Greek yogurt (or blended cottage cheese), half an egg, vanilla extract, and unsweetened almond milk. Mix until smooth and well combined.
- Combine Wet and Dry Ingredients: Pour the wet ingredients into the dry ingredients. Mix until a dough forms. The dough should be moist but not too sticky. If the dough is too dry, add more almond milk one tablespoon at a time until the desired consistency is reached.
- Form Macaroons: Use a small cookie scoop or your hands to form the dough into small balls, about 1 inch in diameter.
- Air Fry: Lightly grease the air fryer basket with cooking spray or line it with parchment paper. Place the macaroons in the basket, ensuring they don’t touch for even cooking. Air fry at 350°F (175°C) for 8-10 minutes, shaking the basket halfway through.
- Coating (Optional): If you prefer, roll the warm macaroons in powdered erythritol for a sweet finish.
- Cool and Serve: Allow the macaroons to cool on a wire rack for a few minutes before serving.
